Quality

Quality is part of our corporate philosophy. In our canteens and bistros in 2004 we prepared and served as many as 2.6 million meals to students at tertiary institutions in Münster. As a service provider with a social charter we naturally have a special responsibility towards our customers. It is a responsibility to always serve you dishes of excellent quality and to guarantee the standard by means of our integrated quality assurance system.

Our policies regarding the products which we source are formulated according to criteria such as nutritional and enjoyment value. However, our decisions are also based to a large extent on how environmentally friendly and socially responsible the production of the foodstuffs is. Being customer orientated is more than just a phrase for us. With a wholly output-orientated management of our student canteens we are constantly geared towards the needs of our customers. Within the framework of our service orientation, since 2005 we have also been operating according to the Guidelines of the “DIG” Association (German Institute for Community Catering).

We regularly survey our customers on the range of products we offer. The results showed that customers had the following priorities regarding the quality of the food at our student canteens.

Top Quality Food

with the following priorities in order of importance:

a) tasty
b) low cost
c) nutritional
d) environmentally friendly
e) organic products, minimum time spent in transit
f) socially responsible e.g. introduction of ‘fairly traded’ items such as coffee.

Attractive, extensive choice of dishes

Accordingly, we create our menus according to the following principles:

1. Assurance of excellence in accordance with nutritional guidelines:
The planning of our menus uses the ‘Recommendations for the intake of nutrition by the German Society for Nutrition (‘Deutsche Gesellschaft für Ernährung’, DGE)’. The recommended energy intake for students is between 9,000 - 11,000 Kilojoules. The midday meal should cover 30 - 35% of the daily energy needs.

Recommended nutritional intake for students’ midday meal

Fat 25 g 21 g
Carbohydrates 120 g 95 g
Calcium 330 mg 330 mg
Magnesium 100 mg 100 mg
Iron 4 mg 4 mg
Vitamin C 23 mg 23 mg

2. Assurance of variety and diversity

We offer our customers in the student canteens 'Mensa am Aasee' and 'Mensa am Ring' three menus. Side dishes are a low-priced extra, or alternatively if they are not required the price is reduced. The combination of the side dishes is decided by the customer.
Please note also the salad, vegetable and dessert self-service buffets, as well as the char-grill counter and the specials.

Currently in all our student canteens we are changing our serving system from a rigid line to a modern free-flow system with a free choice of components. With this serving system we can meet our customers’ requirement for an extensive choice of different dishes, enabling you, our customer, to put together a balanced and healthy meal of your own choice. Anything is possible - from healthy vegetarian dishes from the vegetarian section, to a sausage at the sausage stand or a doner kebab from the weekly specials counter.

3. Short waiting times at the serving counter and cash register

In order to make your visit to our establishment as stress-free as possible and to enable you to enjoy your meal while it is still hot, we have introduced the ‘Mensacard’, a cash-free payment system. This chipped card is available at the info desks at the 'Mensa am Aasee' and at the 'Mensa am Ring' (Coesfeld roundabout), as well as at the cash registers of our other outlets. You can top up your MensaCard at one of the purpose-built machines and, please only if absolutely necessary, also at our cash registers. (More information available under the heading “MensaCard”.)
